A Taste of Spain! Tapas: How to Make Classic Spanish Tortilla
What are tapas? Delightful little snacks meant to be served with sherry or wine. One of the simplest tapas (appetisers) to prepare, Classic Spanish Tortilla can be served warm or at room temperature.

Ingredients
- 1/2 c (125 ml) good olive oil
- 1 lb (500 gr) potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 6 eggs (large)
- salt and freshly-ground pepper to taste
Preparation
- Heat a heavy or nonstick frying pan (high heat) and add the oil. When the oil is hot, fry the potatoes and onion until tender, reducing the heat if necessary. Turn often to avoid burning. Drain the oil and set the potato-onion mixture aside.
- Beat the eggs until frothy and season with salt and pepper. Mix the eggs, potatoes and onions and let sit for 10–15 minutes.
- Heat 4 tablespoons of the remaining oil in the frying pan over medium heat until hot. Pour in the egg mixture and level the surface. Fry for about 5 minutes or until the base is set.
- Use a spatula to loosen the tortilla from the pan. Place a large plate over the frying pan and carefully turn the pan and plate over. The tortilla should now be on the plate. Add a little more oil to the frying pan and slide the tortilla back into it. The cooked side will now be facing up. Finish frying the tortilla until the bottom is set and brown. Use a spatula to loosen the Classic Spanish Tortilla and slide onto the plate. Let it set for a few minutes before serving.
