Armadillo Eggs: Stuffed Jalapeno Peppers

A spicy appetizer that is great for holiday entertaining or football season.
You’ll need these ingredients:
- 20 whole jalapeno peppers
- Small package Monterey jack cheese
- 2 cups Bisquick
- 1 pound breakfast sausage
- 1 cup grated Cheddar Cheese
- Shake N’ Bake for Pork
Method:
Preheat oven to 350 degrees
Remove the seeds from the jalapeno peppers. If you want extremely spicy peppers, leave the seeds in, but beware!
Cut the Monterey jack cheese into small pieces.
Cut a slit in each pepper. Stuff the Monterey jack cheese inside each of the peppers.
Mix together in a large bowl:
- 2 cups Bisquick
- 1 lb. breakfast sausage
- 1 cup grated Cheddar Cheese
Mix these together until they are well blended.
Wrap this mixture around the pepper to cover the pepper completely, making a “shell”.
Shake these “eggs” in a package of Shake N’ Bake for pork.
Bake at 350 degrees until brown, about 35 minutes.
