Autumn Roasted Carrots with Shallots and Thyme
Autumn is near and here is a great recipe for healthy carrots with herbs and shallots to enjoy…

ROASTED CARROTS WITH SHALLOTS AND THYME (Serves 4)
2 Pounds Fresh Carrots (small/medium in size)
1 Cup Shallots, sliced thinly
4 Tsp. Fresh Thyme
3 Tbsp. Olive Oil
Coarse Sea Salt and Freshly ground black Pepper
Preheat oven to 425°
Peel carrots if desired (I do not) and trim green top. Cut larger carrots in half lengthwise and place in a rimmed baking sheet. Add shallots and thyme; drizzle with oil and stir to coat. Season with sea salt and fresh ground pepper.
Roast in the oven for approximately 30 minutes or until tender and lightly browned. Season to taste with additional sea salt and pepper, if desired.

We don’t shallots here in the vicinity, so never have tried them. As for carrots, I love carrots only in the form of ‘Halwa’ (an Indian sweet dish or dessert which tastes very awesome, you can google it). Nice share.
