Avocado with Prawns and Smoked Salmon

A delicious, light recipe which is ideal as a starter to a celebration meal.

Avocado with Prawns and Smoked Salmon

Serves 4

Ingredients

60ml (4 tbsp) mayonnaise

60ml (4 tbsp) soured cream or Greek yogurt

30ml (2 tbsp) snipped chives

10ml (2 tsp) lemon juice

Tabasco sauce to taste

salt and freshly ground pepper

100g (4oz) smoked salmon

100g (4oz) peeled prawns

2 ripe avocado

lemon wedges to garnish

4 unpeeled prawns to garnish

 

Method

1. Make the dressing. Put the mayonnaise in a bowl with the soured cream or Greek yogurt, chives, lemon juice and Tabasco sauce to taste.

2. Cut the smoked salmon into bite-sized pieces. Chop the prawns roughly. Add to the dressing and fold gently to mix.

3. Just before serving halve and stone the avocados. Scoop out the flesh and chop up small.

4. Fold the avocado into the fish mixture. Spoon into the avocado shells, garnish with lemon and prawns and serve immediately.

    This sounds very tasty BB-I love fish dishes, especially ones with prawns in them!
