Beer Battered Onion Rings with Spicy Mayo Dipping Sauce

Perfect served with a steak, burger or on their own.

Ingredients

  • 1 ½ cups good quality beer
  • 1 ½ cups Flour
  • *2 tbsp Corn starch (optional)
  • 3 tsp Paprika
  • 1 tsp Garlic powder
  • ½ tsp dried Parsley
  • 2 ½ tsp Salt 3 tbs Vegetable or Sunflower oil
  • 3 Spanish onions (cut into aprox. 1/4 inch slices)
  • Oil for deep frying

Method

  • Mix together all ingredients except onions in a large bowl
  • Heat oil in a deep fryer or deep pan
  • Dip onions into batter then fry in hot oil a few at a time until they are golden brown

Spicy Mayo Dipping Sauce

  • 2 cups good quality Mayonnaise
  • 1/4 cup minced Scallion
  • 1 ½ tbsp minced Garlic
  • 1/4 cup Olive oil
  • ½ tbsp Chilli oil or Tabasco

Blend together all ingredients in food processor until oil is completely incorporated into the Mayonnaise.

*You can leave the corn starch out of the batter recipe. It just makes the cooked batter a bit crunchier.
