Carpaccio with Avocado & Duck

How to prepare carpaccio with avocado and duck.

Ingredients

· 10 slices of dried duck

· Half of an avocado

· 2 large mushrooms

· 10 stalks chives

· 3 tablespoons olive oil

· 1 tablespoon canola oil

· 1 tablespoon white wine vinegar

· 30 ml balsamic vinegar

· 10 g sugar

· Juice of half lemon

· Black pepper

First we started preparing the ingredients. Peel and slice about 5mm the avocado, mushrooms, cleaned and cut into thin slices. Cut the onion into strips.

Then mix the olive oil, the rapeseed, white wine vinegar, chives, and a little salt and pepper. Mix well to make the vinaigrette. In a pot over medium heat mix the balsamic vinegar and sugar until it forms a syrup, taking care not to burn.
