Artichoke and Parmesan Quiche

This quiche will make a great brunch dish, with slices for up to eight people. It can also be sliced crisscross for quick and easy appetizers.

Ingredients

  • 9 inch frozen pie shell
  • 1 medium onion
  • 5 oz artichoke hearts (frozen or from the jar)
  • ¼ tsp salt
  • ¼ tsp white pepper
  • ½ tsp of parsley
  • 2 Tbsp of butter
  • 2 large eggs
  • 1 ½ cups of whipping cream
  • 1 cup grated parmesan cheese

Method

  1. Preheat oven to 400 degrees.
  2. Line pie shell with aluminum foil and fill with dried beans.
  3. Bake in preheated oven for 10 minutes.
  4. Remove foil and beans.
  5. Lower oven temp to 350 degrees and bake an additional 5 minutes.
  6. Set pie crust aside.
  7. Coarsely chop onion and artichoke.
  8. Melt butter in large skillet.
  9. Add artichoke and onion; saute over medium heat for five minutes.
  10. Pour mixture into the bottom of the pie shell.
  11. In a large bowl, whisk eggs and whipping cream together.
  12. Add cheese and seasonings to the egg mixture.
  13. Pour egg mixture over the artichokes.
  14. Bake at 350 degrees for 35 minutes or until set and golden brown.
  15. Sprinkle with extra cheese and parsley.

Serve!
