Indonesian Fried Rice Casserole

This is a superb Indonesian main meal.

INDONESIAN FRIED RICE CASSEROLE

5 pounds chicken

7 cups water

2 green onions

1 bay leaf

parsley

3 tablespoons salt

2 cups raw rice

1/3 cup oil

2 Spanish onions, cut fine

2 cups cubed ham

4 tablespoons chunky peanut butter

garlic

1/2 teaspoon mace

1 teaspoon ground chili pepper

1 teaspoon cumin

2 teaspoons ground coriander

2 cups shrimp

1 cup  crab meat

Stew chicken in water with green onions, bay leaf, parsley and salt.  Bake rice in 4 cups chicken broth.  Blend oil, Spanish onions, garlic, peanut butter, mace, chili pepper, cumin and coriander; add chicken, cut in strips, coarsely chopped shrimp, crab meat and cubed ham.  Mix well with rice and heat through.

Can be served with:

2 packages salted, toasted and sliced almonds

1 pound chutney

8 ounces candied ginger, cut coarsely

1 cucumber, sliced thin.

Makes 10 servings.
