Rabbit Casserole

Here’s a tasty rabbit casserole, that I know all You hunters out there, will really enjoy. Freshly caught rabbit is chopped into pieces, then fried in butter and slowly baked with a delicious mix of vegetables.

Grab Your bow and arrows and get ready for a hunt. Because this recipe call for rabbit and what better way to cook then to catch what You’re going to be eating. Especially when it comes to the extraordinary taste of this rabbit casserole recipe.

Ingredients

  • 1oz butter
  • 2lb rabbit (cut into pieces)
  • 7oz tomatoes
  • 1 tablespoon cornflour
  • 4oz carrot (coarsely grated)
  • 1 tablespoon orange zest (finely grated)
  • 1 teaspoon oregano (dried)
  • 2fl oz brandy
  • 1fl oz white wine vinegar
  • 13fl oz warm water
  • 2 bay leaves

Preparation

Start by preheating the oven to 350°F. Then melt the butter in a large frying pan and brown the rabbit pieces well, turning frequently, then transfer the pieces to a large casserole dish. Put the tomatoes in a bowl of boiling water; leave for two minutes. Peel off the skins and chop the flesh into small cubes. Add to the casserole dish.

Combine the cornflour, carrot, orange zest and oregano in a small bowl. Pour in the brandy, vinegar and warm water, and stir well. Pour over the contents of the casserole dish and add the bay leaves. Cover and bake for one and a half hours or until the rabbit is tender, and serve.
