Zucchini Quiche

Last night I fried up my first home grown Zucchini of the season! My hard work in the garden is finally starting to pay off. Their are literally hundreds of ways to enjoy this delectable summer squash. Zucchini quiche is one of my favorites!

Zucchinis are best if they are picked and eaten when they are eight to ten inches long.  Larger zucchini tend to lose their flavor and have big seeds and a woody texture.

Zucchini Quiche

Ingredients

  • 2 cups zucchini, sliced thin
  • 1 cup white onion, sliced
  • 3 Tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1-1/2 teaspoons salt
  • 4 eggs, beaten
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup mozzarella cheese, grated
  • 10 inch baked pie crust

Method

Saute zucchini, onion, and garlic in oil.  Season with salt.  Spread evenly in pie crust. Combine remaining ingredients and pour into pie shell. Bake in preheated 375° oven 30-35 minutes until custard is set.

Serve hot!
