Cheesy Spinach and Pepperoni Stir-fry

I’m all about quick, easy n nutritious now days. I’ve been throwing all kinds of things together to find new tasty foods to eat. Here’s a fantastic idea for a quick and nutritious as well as delicious lunch!

Cheesy Spinach and pepperoni stir-fry!

 

 

This is not only delicious but it is nutritious and low in points if you count weight watchers points. I like to include weight watchers points just because I’m counting points and I know I like to know that about a recipe when I cook it.

 

Ingredients:

 

1 table spoon of Extra Virgin Olive Oil

2 cup fresh baby spinach in the bag (found in produce section)

17 slices of turkey pepperoni

1 cup fresh mushrooms

1 cup fresh zucchini and yellow squash

¼ cup chopped onion (optional)

Garlic salt (to taste)

Molly Mcbutter

¼ cup of your favorite kind of shredded cheese (I use a mix)

 

Directions:

 

Heat Olive Oil in a large frying pan

Add squash, onion, mushrooms and sauté. Once those veggies are starting to soften add spinach. When spinach starts to wilt, sprinkle garlic salt and molly Mcbutter on stir-fry and then add shredded cheese. Once cheese is melted your stir-fry is ready.

 

Makes about two 1 cup servings

Weight watchers points about 3 per serving

 

Also good with Chow main noodles or almond slivers sprinkled on top but that changes the weight watcher point value

 

With ½ cup of chow main noodles on top the points become 6 per serving

With about 15 almonds chopped it makes the points about 5 per serving.

 

French bread toasted with a little butter and garlic salt on it tastes great with this. Of course if your weight watching this is about 3 more points per slice IF you use a butter that is only 1 point such as I Can’t Believe It’s Not Butter LIGHT
