Curried Cashews

Deceptively easy to make; curried cashews can be used as an ingredient in many dishes, most notably as a dessert topping where they provide crunch and flavor.

Curried cashews are used in a multiplicity of dishes but it is as a snack consumed while being entertained (watching a movie, TV, circus, Cirque de Sole etc.) or as a dessert topping; for example sprinkled over ice cream, that curried cashews are most commonly used.

Ingredients

  • 1 Cup of Raw Cashews
  • ½ Teaspoon of Canola Oil
  • ½ Teaspoon of Curry Powder
  • Freshly Ground Sea Salt to Taste

Method

  1. Preheat oven to 350 degrees F. 
  2. Place cashews on an unlined baking sheet and bake in preheated oven until cashews become fragrant and slightly browned (10 to 15 minutes depending upon cooking appliance being used). 
  3. Once the cashews are cooked take a medium small mixing bowl and add in the canola oil. 
  4. Transfer cashews to bowl with canola oil in it.
  5. Swirl the cashews to ensure that all of the cashews are coated in a very thin film of canola oil. Doing this will help the curry powder to adhere to the baked cashews as well as facilitating the fusion of the aromatics and flavors inherent in the ingredients. The desired result here is to produce curried cashews that have a new morphed flavor all of their own rather than curried cashews that the diner can readily identify the ingredients used by taste alone.
  6. Sprinkle in curry powder gently swirling cashews as you do so.
  7. Once all of the curry powder has been added to the mix toss the nuts to ensure even coverage of the cashews
  8. If so desired add the freshly ground sea salt and gently toss.

Serving

Allow curried cashews to cool prior to consumption or use as an ingredient in another dish. Once cooled transfer curried cashews to an air tight container for storage
