Anaheim Chili Cheese Dip (Chile Con Queso)

Enjoy this authentic gooey Tex Mex dish at a party or as a meal.
Ingredients
- 6 Large Anaheim Green Chilies
- 2 Jalapenos
- 2 Large Tomatoes
- 1/2 Medium Size Onion Chopped
- 1 Large Garlic Peeled And Crushed
- 1/2 Bushel Cilantro Chopped
- 2 Cups Grated Mozzarella Cheese
- 1 Cup Grated Cheddar Cheese
- 1 Cup Grated Monterrey Jack
- 1/2 Cup Olive Oil
- 1/4 Cup Water
- 2 Cups Milk
- 1/2 Lime
- 2 tsp salt (sea salt preferred)
- 1/2 tsp pepper
- 1 bag of tostada chips
Method
- Warm pancake skillet to medium heat.
- Wash chilies and tomatoes with cool water, dry and place on skillet.
- Spread evenly on skillet.
- Turn them constantly to ensure that they toast evenly.
- When they are evenly toasted remove from skillet and place in large bag.
- Let them stew in bag for fifteen minutes. While this is happening, caramelize onions and garlic in olive oil at medium high heat then turn it off.
- Remove skins from peppers and tomatoes.
- Blend ingredients with salt, pepper, water and lime at a pulse holding blender for five seconds at three separate intervals.
- Mix ingredients in with onions and garlic into fry pan.
- Heat at medium low heat. Add milk and bring to a simmer, about five minutes.
- While at a simmer add a handful of cheese at a time, until all the cheese is melted.
- Add fresh cilantro and mix.
- Immediately transfer to a serving bowl and enjoy as a meal or party dip with tostada chips.

Prep: Blender, Large Plastic Zip Lock, Flat Pancake Skillet evenly coated with Olive Oil, Large Fry Pan
For those of you cheesy people, feel free to add an extra cup of monterey jack and chedder, or just add till your hearts content!
