Confetti Dip

Confetti dip is a long-standing popular, quick and easy to make dip based around sour cream.

Confetti dip is a long-standing popular, quick and easy to make dip based around sour cream. By way of interest sour cream is a dairy product produced by introducing lactic acid-producing bacteria to cream to produce a slightly tart and thicker product thought to have been in continuous use along with various other fermented milk products since around 10,000 BC. Enough of that let us get to the recipe.

Ingredients

  • 1 Packet of Onion Soup Mix
  • 1 Pint of Sour Cream
  • 2 Tablespoons each of Cucumber, Chives (the smallest species of the onion family), Red Bell Pepper and Green Bell Pepper
  • Sea Salt and Black Pepper to Taste

Method

  1. Wash, peel and finely dice enough fresh cucumber to produce the equivalent of 2 tablespoons of finely chopped cucumber
  2. Wash, trim and finely dice enough red bell pepper and green bell pepper to produce the equivalent of 2 tablespoons of each
  3. Wash, trim and finely dice enough chives to produce the equivalent of 1 tablespoon of diced chives
  4. Pour sour cream into a medium large mixing bowl, add in the onion soup mix and combine well. Then; while stirring, add the cucumber, the bell peppers, the chives, the salt and the ground black pepper. Stir to distribute ingredients evenly throughout the dip mixture, which should be of an even texture and consistency when ready.
  5. Then cover the confetti dip with plastic cling wrap and place it into the refrigerator to chill for at least one hour prior to serving

Serving

These portions will yield approximately 2 cups of dip. Serve as a side dish, appetizer or finger food accompanied by potato chips, corn chips, water crackers and savory crackers etc.

Confetti dip also makes a wonderful addition to soups and chilies. Simply spoon a generous dollop of the confetti dip on top of soup or chili and garnish with a little parsley. Enjoy!
