Cranberry Jelly

A clear, ruby red jelly to give away or enjoy at the family holiday feast.

Ingredients

  • 3 ½ cups cranberry juice cocktail
  • 1 – 2 ¼ ounce package powdered fruit pectin
  • 4 cups sugar
  • ¼ cup lemon juice

Method

  1. In a large saucepan or kettle, combine cranberry juice and pectin.
  2. Stir over high heat until cranberry mixture comes to a full rolling boil.
  3. Stir again and boil hard 2 minutes, stirring constantly.
  4. Remove from the heat and stir in lemon juice.

  5. Skim foam off the surface.
  6. Pour jelly into hot scalded jars.

Makes 6 half pints.
