Cranberry Jelly
A clear, ruby red jelly to give away or enjoy at the family holiday feast.
Ingredients
- 3 ½ cups cranberry juice cocktail
- 1 – 2 ¼ ounce package powdered fruit pectin
- 4 cups sugar
- ¼ cup lemon juice
Method
- In a large saucepan or kettle, combine cranberry juice and pectin.
- Stir over high heat until cranberry mixture comes to a full rolling boil.
- Stir again and boil hard 2 minutes, stirring constantly.

Remove from the heat and stir in lemon juice.
- Skim foam off the surface.
- Pour jelly into hot scalded jars.
Makes 6 half pints.
