Creamy Herb Dressing

This makes about one cup.


Ingredients

  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 4 tablespoons red wine, champagne, or tarragon vinegar
  • 2 teaspoons chopped fresh herbs, such as tarragon, basil, dill or chives
  • 1/4 teaspoon freshly ground white pepper
  • 1/8 teaspoon salt

Method

In a mixing bowl, whisk together the mayonnaise, mustard, vinegar, chopped herbs, salt and pepper. The dressing should be thick, but pourable. If it is too thick, you can add a few drops of water.

Variations

  1. 1. Substitute lemon juice for the vinegar.
  2. 2. Make a creamy garlic dressing by subtituting finely minced garlic fo the herbs and freshly ground black pepper for the white pepper.
