Fast, easy and cheap superbowl recipes.

Dip; 

 

Hummus…healthy and yummy and better yet easy to make

 

1 can (19oz/540ml) chickpeas

3-4 garlic cloves, chopped

¼ cup olive oil

¼ cup lemon juice

2 tbsp chopped parsley( fresh is best)

Pinch salt and pepper

 

Blend together all ingredients except parsley in food processor, puree until smooth. Transfer to bowl stir in parsley or garnish the top…

 

 

Spinach dip…umm so good

 

1 fresh bunch, 1 fresh bag or 1 bag of frozen spinach 8-10oz

2/3 cup mayonnaise

1 cup sour cream

½ tsp lemon juice

½ small onion, shredded

1 tsp chopped chives, or garlic chives

2 tsp finely chopped fresh parsley or 1 of dried parsley

¼ tsp salt, pepper

½ tsp onion powder and paprika

Using fresh spinach; Remove any large steams on leaves, chop spinach thoroughly and boil for 2 ½ – 3minutes. Strain and rinse with cool water; let sit in strainer for 5-10 minutes, and then blot with paper towel to dry. Add sour cream and mayonnaise, mix well. Add remaining ingredients then chill, serve warm or cold.

If using frozen spinach, let thaw then gently squeeze out water, or strain. Pat to dry and mix as directed above.

 

 

 

 

Cheese spread…make it your own

 

 

1 8 oz container cream cheese

3/4 cup you favourite ….pepper jelly, chilli sauce,  or jalapeño jelly

 

Mix in processor till blended, put in container a chill for several hours before serving

 

 

 

For the dip:

 

Instead of chips try toasting up some chopped pita pockets, or your favourite flat bread wraps. Use vegetables and crackers to dip or spread on as well.

 

Snack For the kids :

 

Deep fry some wong-tong wraps and sprinkle with cinnamon sugar or their favourite popcorn seasoning. Make fruit kabobs with cool whip to dip or flavoured pudding, even baby food works as a good dip…just don’t tell them what it is J

 

 

 

Other quick ideas…

 

-Cooked frozen baby shrimp with cream cheese onions with some seasoning inside a puff pastry…so delicious. Or how about some tomato sauce, with cheese and chopped pepperoni….pizza puffs…

 

-How about chopped up wiener wrapped in bacon with tooth picks… bake and serve

-How about day old crusty bread or French loaf, chopped into big chunks coated in olive/veg oil seasoned with garlic powder, salt, pepper and parmesan cheese, toast in oven and serve…

 

Make it fun and simple and remember to enjoy the game, try to cut the calories and don’t drink and drive…Have fun…
