Low-fat Low-calorie Mexican Dip
Great tasting dip that is heart-healthy!
Layered Mexican Dip
2 (1-pound) cans fat-free refried beans
1/2 pound ground turkey, cooked and drained, skinless, white tenderloin
3 cups nonfat Mozzarella cheese
1 cup grated nonfat Cheddar cheese
16-ounce jar taco sauce
1 cup fat-free sour cream
3 tablespoons fat-free chicken broth
1 large diced onion
Brown the diced onion in chicken broth. Add cooked ground turkey. Stir refried beans into turkey mixture. Spread into a 9 x 13 inch casserole dish that has been sprayed with nonfat cooking spray. Sprinkle green chilies over top of turkey-bean mixture. Spread 1/2 of cheese over this. Pour taco sauce over cheese. Sprinkle remaining cheese on top and bake for 20 to 25 minutes. Cool slightly and spoon sour cream to make a cross on top of casserole. Serve with low-fat tortilla chips. 32 servings.
