Pinto Bean Chunky Dip
How to make pinto bean chunky dip.
Did you know you can make a delicious pinto bean chunky dip using your slow cooker?
Ingredients you’ll need:
1 teaspoon of ground cumin
1 1/2 cups of shredded cheese
1/4 cup of chopped cilantro
30 ounces of pinto beans (rinsed and drained)
14 1/2 ounces of diced tomatoes
1 cup of chopped onion
2/3 cup of chunky salsa
1 tablespoon of vegetable oil
1 1/2 teaspoons of garlic
1 teaspoon of ground coriander
Directions:
Combine the beans, tomatoes, onion, salsa, vegetable oil, garlic, cumin and coriander in the slow cooker.
Cover and cook on the low setting for 5 or 6 hours (or until the onions are tender).
Mash the bean mixture with a potato masher. Mix in the Cheddar cheese and cilantro.
Serve with chips or vegetables. This recipes makes about 5 cups of dip.
