Salsa Marinate With Chicken and Shrimp

I used a mild Salsa as marinate for my chicken and shrimp. I must say I received great reviews from family and friends.

Salsa is a great seasoning; it has all you need right in one jar (i.e. tomatoes, peppers, onions, garlic etc.) Easy prep and quick cooking with using poultry, steak and seafood. We all can be chefs making delicious, almost effortless meals, which can fit into our time schedules (getting off work at 5:30pm, picking up the kids by 6pm, doing HW checks, prepping for tomorrow, all while you’re preparing dinner for tonight.)

Ingredients

  • 1lb – chicken breast (skinless, sliced thin)
  • 1lb – shrimp (uncooked, peeled & deveined)
  • 2 c – salsa (hot, mild or reg.)
  • 2 c – chicken broth rice or white rice

Method

  1. Use one cup of Salsa to marinate the chicken and shrimp in separate bowls for about 10 minutes. In a hot pan use about 2 tlbs of Vegetable Oil and pour in chicken mixture and cook till pink is gone. Pour Chicken into clean bowl (clean the pan) and repeat steps for Shrimp (using about 2 tlbs of Olive Oil instead).
  2. When shrimp is almost done add in chicken and pour in the other cup of salsa and cook chicken and shrimp for about 5 more minutes.
  3. Rice: Combine 2 cups of parboiled rice w/3-4 cups water and add 1 packet of chicken broth and cook accordingly let rice sit w/lid on for about 5 min before serving
  4. Pour finished Salsa Marinate: Chicken and Shrimp over chicken broth rice (Great with garlic bread)
  5. Serve and eat. My 8 yr old loved it!
