Simple to Make Vegetable Pakora

Easy to make Indian style vegetable pakoras.

I have been making these for years the recipe was taught to me by my sikh friends mother so easy yet delicious!

  1. In a large pan boil some water and add whatever chopped and cubed vegetables you like, i use   potatoes, carrots, peas, spinach and cauliflower but  you can really use any veg you like i would recommend the potatoes though because they add bulk to the pakoras.
  2. When all the vegetables are boiled reasonably soft, drain them through a sieve or collinder.
  3. Fry some oil in a large pan and add chopped onions , chillies and chopped peppers
  4. Add two tablespoons of curry powder and fry
  5. Add cooked vegetables and fry all ingredients until onions are browned.
  6. Put cooked vegetable mixture to one side
  7. In a large bowl mix two cups of besan or gram flour and a half cup of self raisng flour
  8. Add water to the flours and mix until you get a smooth consistency
  9. Add the vegetable mix to the bowl and mix in
  10. Heat oil in a deep fat fryer or frying pan until quite hot
  11. Using a large spoon take a portion of the vegetable/ flour  mix and using another spoon ladle the mixture into the hot oil
  12. Fry until golden brown and remove from pan then repeat process
  13. Dry the pakoras on kitchen paper and leave to cool
  14. Serve with raita, chutney or sweet chilli dip

Mmm … I can almost taste these Frosty. I love Indian food and as a ’semi’ vegetarian (I eat fish and free range chicken) I’m always on the look-out for something a little different. I’ve printed out your recipe and put it in my old ’school recipe’ folder (from 35 years ago). It’s a bit dog-eared now but just goes to show how often it’s handled!!
