Simple to Make Vegetable Pakora
Easy to make Indian style vegetable pakoras.
I have been making these for years the recipe was taught to me by my sikh friends mother so easy yet delicious!
- In a large pan boil some water and add whatever chopped and cubed vegetables you like, i use potatoes, carrots, peas, spinach and cauliflower but you can really use any veg you like i would recommend the potatoes though because they add bulk to the pakoras.
- When all the vegetables are boiled reasonably soft, drain them through a sieve or collinder.
- Fry some oil in a large pan and add chopped onions , chillies and chopped peppers
- Add two tablespoons of curry powder and fry
- Add cooked vegetables and fry all ingredients until onions are browned.
- Put cooked vegetable mixture to one side
- In a large bowl mix two cups of besan or gram flour and a half cup of self raisng flour
- Add water to the flours and mix until you get a smooth consistency
- Add the vegetable mix to the bowl and mix in
- Heat oil in a deep fat fryer or frying pan until quite hot
- Using a large spoon take a portion of the vegetable/ flour mix and using another spoon ladle the mixture into the hot oil
- Fry until golden brown and remove from pan then repeat process
- Dry the pakoras on kitchen paper and leave to cool
- Serve with raita, chutney or sweet chilli dip

Mmm … I can almost taste these Frosty. I love Indian food and as a ’semi’ vegetarian (I eat fish and free range chicken) I’m always on the look-out for something a little different. I’ve printed out your recipe and put it in my old ’school recipe’ folder (from 35 years ago). It’s a bit dog-eared now but just goes to show how often it’s handled!!
