Thanksgiving Cranberry Razzy Compote for Roasted Turkey

published by Lauren Axelrod on Nov 2, 2008

A lovely centerpiece for the holiday season, this fruity concoction is a welcoming accompaniment to a roasted ham or turkey.

Ingredients:

  • 1 package fresh or frozen raspberries
  • 1 package fresh or frozen cranberries
  • 2 medium granny smith apples
  • 1 cup sugar
  • ¼ cup brown sugar
  • 1 cup golden raisins
  • ¼ cup orange juice
  • ¼ tsp cinnamon
  • 1 tsp salt
  • ½ tsp grated orange peel
  • ½ tsp grates lemon peel
  • ¼ tsp allspice
  • 1 can apricot halves-drained
  • 1 can sliced peaches-drained

Method:

  1. In a saucepan, combine all ingredients except for the canned fruit.
  2. Bring to a rapid boil.
  3. Reduce heat and simmer for 12 minutes until the cranberries are plump and the apples are tender.
  4. Add the canned apricots and peaches and simmer for 5 more minutes.
  5. Serve hot or cold.

Note: You may add roasted candied pecans or slivered almonds as a garnish.
