How the Ybanag of the Philippines Prepare Camote Salad

Camosi or Camote Tops is one of the most commonly known vegetable dishes of the Ibanag. Camosi is an easily grown vegetable, and all Ybanag families grow it in their backyard. Camosi can be sauted, boiled, or added to a salad.
The procedure is so simple.
- First, boil one cup of water in a pan. Add washed camote tops and stir until wilted. It is removed from fire immediately to avoid over cooking.
- It is placed in a big bowl for easy mixing of ingredients.
- One piece of cubed tomato, one piece of sliced onion, and one teaspoon of chopped ginger are mixed with two tablespoons of bagong (fish paste) and two tablespoons of vinegar or calamansi juice are added to the simmering vegetable.
- Then, it is served on a flat plate garnished with tomatoes.
This is best eaten as mappaganas ta accacan (appetizer) with stews.
