Leek, Bacon and Goat Cheese Tart

Perfect served as an appetizer or with a salad as a meal.
Ingredients
- Pastry for nine inch pie (or pre-made 9″ pie shell)
- 3 ounces chopped bacon
- 3 leeks. Use white part only, thinly sliced. .
- 1/4 cup white wine (non alcoholic works just as well)
- 1/4 cup heavy cream
- 1 cup grated goat cheese
- 1.2 tsp garlic powder
- Olive oil
- Salt and pepper
Method
- Heat olive oil in fry pan
- Add bacon and cook 2-3 minutes over medium heat
- Pour off excess fat
- Add leeks and saute 4-5 minutes until they are tender
- Pour in white wine to de-glaze pan
- Whisk in garlic powder
- Bring to a boil and add heavy cream
- Allow mixture to cool and add goat cheese
- Add mixture to pastry shell and bake in pre-heated 350 degree oven for 30 minutes or until golden in color
Tip:
This recipe can be used to make mini tarts and served as appetizers

This sounds very interesting. I have to cut the portions down and taste test this one first. (Smile.) I think I will like it though.
