Leek, Bacon and Goat Cheese Tart

Perfect served as an appetizer or with a salad as a meal.

Ingredients

  • Pastry for nine inch pie (or pre-made 9″ pie shell)
  • 3 ounces chopped bacon
  • 3 leeks. Use white part only, thinly sliced. .
  • 1/4 cup white wine (non alcoholic works just as well)
  • 1/4 cup heavy cream
  • 1 cup grated goat cheese
  • 1.2 tsp garlic powder
  • Olive oil
  • Salt and pepper

Method

  1. Heat olive oil in fry pan
  2. Add bacon and cook 2-3 minutes over medium heat
  3. Pour off excess fat
  4. Add leeks and saute 4-5 minutes until they are tender
  5. Pour in white wine to de-glaze pan
  6. Whisk in garlic powder
  7. Bring to a boil and add heavy cream
  8. Allow mixture to cool and add goat cheese
  9. Add mixture to pastry shell and bake in pre-heated 350 degree oven for 30 minutes or until golden in color

Tip:

This recipe can be used to make mini tarts and served as appetizers

    This sounds very interesting. I have to cut the portions down and taste test this one first. (Smile.) I think I will like it though.
