Broiled Fish and Cheese

8 ounces fish steaks or fillets (fresh is best)

dash ground pepper

seasonings to taste (oregano, marjoram, rosemary, or thyme)

4 ounces sharp cheddar cheese, grated

1/2 tablespoon prepared mustard

1 teasoon horseradish

8 ounces tomato juice

Cook tomato juice until thickened. Season fish with ground pepper and other seasonings as desired. Place fish on a rack in a broiler pan that has been sprayed with Pam. Broil fish about 8 minutes, turn abd broil another 7 to 10 minutes on the other side, until fish flakes when tested with a fork. Combine grated cheese, prepared mustard, horseradish, and cooked down, thickened, tomato juice mixture over fish and return to the broiler for 1 or 2 minutes longer or until cheese melts and browns .Makes 4 servings.
