Brown Bagging It
Eating lunch out is expensive and it takes time away from your lunch hour that you could use to rest and destress. You can brown bag it and save time and money. Here are a number of suggestions for carrying a light lunch that might fill your requirements better than the fast food joint across the street. These lunches are healthy and you might save enough time to take a leisurely walk.
Try these alternatives for brown bagging it. Get out several sandwich bags and plastic containers to pack these foods individually. For lunch number 1 try a few cheese cubes, a handful of nuts, several carrot chunks, a cut up pear and a wholewheat muffin.
Do a Mediterranean Pita Pocket. Spoon 1/2 cup humus into a small plastic container. Sprinkle with 1 tablespoon sunflower seeds and 2 Tablespoon raisins. Just before eating spoon into a whole wheat pita pocket. Pack one container with lettuce and grape tomatoes to eat on the side.

White Bean Pesto Salad: In a plastic container, mix 1 cup rinsed drained white beans, 1 tablespoon pesto, 1/2 medium tomato chopped, and 2 tablespoon chopped onion or celery if you’re afraid of bad breath. Eat with whole wheat crackers and a few cheese cubes or sliced apple.
Tuna Salad: In a plastic container, combine a 5 ounce drained water packed tuna, 1 tablespoon canola oil mayo, 1 cubed pickle and 1/2 rib of celery, diced. Serve with whole wheat crackers. Add a small container of grapes or strawberries.
Spread two slices whole wheat bread with mustard and light mayo. Add a slice of turkey. Place slices of tomato in plastic container. Place tomato slices in the sandwich when ready to eat. Add a sectioned orange in the 2nd plastic container.
Peanut Butter Jelly Sandwich with carrots and fruit. Make a peanut butter jelly sandwich and place in sandwich bag. Add carrot sticks and sliced apple or pear to plastic container.
Deviled Egg Sandwich and veggies. Mash boiled egg with light mayo and pickle relish. Make a sandwich with whole wheat bread. Fill plastic container with sliced cucumbers and celery sticks. Cut up a pear or apple in 2nd plastic container.
Chicken Salad Sandwich with fresh brocolli. Make chicken salad sandwich. Place fresh brocolli in plastic container. In second plastic container place a few spoons of salad dressing or light mayo for dipping. Add a piece of fruit or grapes to bag.
