Similar to eggs benedict, this dish starts out with a piece of bread and is topped with meat and an egg. But unlike the traditionally for-breakfast eggs Benedict, this tapa can be eaten any time of the day.

Serves: 2 to 3

Prep time: 5 minutes

Cooking time: 15 minutes

Ingredients:

  • extra virgin olive oil for frying
  • 6 pieces quail eggs
  • 6 slices chorizo iberico
  • 6 tiny round slices of baguette
  • 3 pieces piquillo pepper

Method:

  1. Pour oil into a small skillet and fry the quail eggs sunny side up
  2. In another pan, slightly fry the chorizo. No need to use oil.
  3. Lay all ingredients on the moni baguette toasts, starting with a piquillo pepper, then a slice of chorizo, and topped with fried quail egg
