Lamb Kabobs

Throw into a food processor: 1/4 cup mixed pine nuts, pistachios & dried apricots 1 large garlic clove 1 teaspoon ground coriander 1 teaspoon cumin 1/2 teaspoon paprika 1/2 teaspoon honey 2 teaspoon lemon juice 1 teaspoon ground turmeric 2 Tablespoon tomato paste 1 Tablespoon olive oil After well blended pour into a bowl and toss in 3/4 lbs cubed leg of lamb- mix until coated it’s a marinade also can be used on chicken, pork even salmon. Marinade 20 minutes or how every long.

Sauce: heaping Tablespoon low-fat Greek yogurt 2 heaping Tablespoons mayonnaise & finely chop garlic

Lamb Meat: Place lamb on skewers and place on preheat grill on a medium high heat for a seared crust cook 4 minutes on each side for a total of 16 minutes Let it rest while you warm the pita bread.

Place in pita add whateve toppings you like: Top with the sauce

examples: 4 tomatoes chopped 1/2 red onion diced 2 cups store bought coleslaw mix 2 Tablespoon fresh oregano 2 Tablespoon fresh mint chopped.
