Delicious Vegetarian Focaccias

Makes 4
Ingredients*:
1 large loaf of flat Turkish bread
2 tablespoons pesto
A quarter of a small butternut pumkin, sliced and baked till soft
1/2 cup marinated artichokes, sliced
1/2 cup marinated semi dried tomatoes
1/4 cup marinated mushrooms
4 large strips of marinated eggplant, sliced into sections
4 large strips of marinated red pepper, sliced into sections
Feta or goats cheese
To make, first slice the flat bread in half length wise. Place both pieces under the grill until golden brown, then turn and repeat. Brush the pesto onto the bottom slice of bread, coating it all. You can use more or less pesto, depending on your taste. Start layering the vegetables evenly. Add feta or goats cheese on top. How much you use is up to you. Personally I like quite a lot but if you prefer softer flavours or are watching your weight a little will go a long way. Buffalo mozarella can be used instead, if preferred. Finally, put the top slice of flat bread on then cut four pieces on the diagonol. Place back under the grill for a minute or so, then serve.
For a higher protein option try adding marinated tofu.
*Home made Turkish bread, pesto and marinated vegie’s do add a special something but store bought is just fine.
