Denver Omelet Pie

Denver Omelet Pie is a quick easy breakfast or brunch entree. Great for the whole family and for serving holiday guests.

6 eggs

1/4 teaspoon salt

1/8 teaspoon pepper

3 cups frozen hash browns

4 oz  Swiss Cheese, shredded

1/2 cup diced ham

1/2 cup chopped bell pepper

1/2 cup chopped onion

1 tomato, chopped

Heat oven to 350 degrees.  Generously grease a 9 inch deep dish pie pan or baking pan.  In a medium bowl, beat eggs with salt and pepper.  Stir in hash browns, cheese, ham, bell pepper, onion, and tomato.  Pour into baking dish.  Bake to 40 – 45 minutes or until set.
