Egg and Onion Bake
A delicious, superbly flavoured dish. Add your own special touch to it to make it even more interesting. Serve with a salad and soup for a complete meal.
INGREDIENTS:
- 2 tablespoons butter
- 2 large onions, sliced
- 4-5 cloves garlic, chopped
- Chopped cooked bacon
- Chopped cooked ham
- Chopped cooked chicken
- Sliced cooked mushrooms
- 2 eggs
- 1 cup milk
- 2 ½ slices bread
- 1 large capsicum, chopped
- 4 tomatoes, skinned and chopped
- Salt
- Pepper
- Herbs to taste
- 2 tablespoon cheese (optional)

METHOD:
- In a flat-bottomed microwave safe dish, heat the butter for 1 minute. Drop in the onions and garlic.
- Cook at 100% power for 3 minutes. Set aside. If you are using the bacon, ham, chicken or mushrooms, drop in over the onions.
- In another bowl, beat together the eggs and milk. Make the slices of bread into crumbs by whizzing in the blender for few seconds.
- Pour the egg-milk mix over. Stir in the capsicum, tomatoes, seasonings and herbs.
- Oregano or rosemary imparts a distinctive flavour. If you are using the cheese, stir it in too.
- Pour this whole mix over the onions in the dish.
- Set the oven to MW + Conv. (50% + 200 degrees). Preheat for 10 minutes, then put dish in on the low rack and continue to bake for 20 minutes or till browned to your preference.

I must try this recipe! Sounds YUMMY!!!!!!! I am sure if I make this when my daughter comes to visit she will be making the noise she usually makes when she enjoys food. (My husband and sometimes my other daughter does it at the start of the meal. The other daughter who doesn’t live with me does t during the whole meal.
