Eggs Golden Rod..
Traditional egg breakfast served in "our" family on Holidays.
What you will need:
6 hard boiled eggs
3 tblsp butter
3 tblsp flour
approx 2 cups of milk
salt and pepper
6 pieces toasted bread of your choice
How to make it:
Sep. and place in a bowl the yolks and mash with a fork. In another bowl, dice into chunks the egg whites. Set aside. In a med sized sauce pan melt 3 tblsp of butter on med heat. Stir in (to make your roux) the 3 tblsp flour. When it begins to lightly bubble, stir in smalll amounts of milk. Continue stirring and adding milk until you have reached desired consistancy. Salt and pepper for flavor to taste. Once your roux is made then add in all your diced egg whites. Spoon egg sauce over 2 slices of lightly buttered toast and sprinkle the top with your egg yolks. Lightly slat and pepper to taste.
