Ellie’s Sunday Strata

Cheese sauce:
2 tbsp. butter
2-1/2 tbsp. all-purpose flour
2 c. 2% reduced-fat milk
1/2 tsp. salt
1/8 tsp. freshly ground black pepper
1 c. shredded American cheese

Strata:
3 tbsp. butter
1 c. diced lean ham or Canadian bacon
1/4 c. chopped green onions
12 eggs, beaten
1/4 lb. sliced mushrooms
1/4 c. melted butter
2-1/4 c. 1″ bread cubes
Paprika

1.  To prepare the cheese sauce, melt butter in a heavy saucepan over low heat.  Blend in flour & cook 1 min., whisking constantly.  Gradually add milk; cook over med. heat til thickened, stirring constantly.  Add salt, pepper & cheese, stirring til mixture is smooth.

2.  Oil a 13X9″ glass baking dish or coat it w/ cooking spray.  Melt 3 tbsp. butter in lg. skillet.  Add ham & green onions & saute til ham is lightly browned & onions are tender.  Add eggs & cook over med.-high heat, stirring to form lg. soft curds.  When eggs are set, stir in mushrooms & cheese sauce.

3.  Spoon egg mixture into baking dish.  Combine melted butter & bread cubes, mixing well; spread evenly over egg mixture.  Sprinkle lightly w/ paprika.  Cover & refrigerate overnight.

The Next Day
4.  Preheat oven to 350 deg. F. & remove dish from refrigerator.

5.  Bake strata, uncovered, about 30 min., til thoroughly heated & lightly browned on top.  Serves 12.
