Fast and Furious Lobster Rolls with Creamy Dijon Sauce

A quick and easy recipe for unexpected house guests. Serves four. 10 minutes cook time, 30 minutes prep.

Ingredients

  • 1 ½ lbs of lobster meat
  • 1/3 cup light mayonnaise
  • 2 tbsp Dijon style mustard
  • 1 tsp grated lemon peel
  • 1 tbsp minced sweet onion
  • 1/3 cup diced celery
  • 1 tsp lemon juice
  • ¼ teaspoon ground red pepper
  • 4 hoagie rolls, split and toasted

Method

  1. Finely chop the lobster meat.
  2. In large bowl, combine all of the ingredients and toss gently.
  3. Spoon the mixture over the hoagie rolls.
