INGREDIENTS:

  • ½ cup grated cheese
  • ½ tablespoons butter
  • Few tablespoon tomato/chilli sauce
  • Mustard, salt and pepper to taste

ADD-ONS:

  • Finely chopped onion
  • Green chilli
  • Grated carrot
  • Finely chopped capsicum
  • Chopped ham
  • Sautéed mushrooms
  • Olives

METHOD:

  • Put the butter on a microwave-safe plate and if needed, soften it by microwaving at 100% power for 10 seconds.
  • Add the rest of the ingredients, including your preferred add-ons. Make into a smooth, spreadable paste.
  • Toast 4 slices bread. Spread with the cheese mix.
  • Preheat the grill for 10 minutes. Grill the toast on the high plate for 5-7 minutes or till browned to your preference.

MAKES 4 TOASTS

HANDY TIP:

For a delicious variation, try this Mushroom Spread. Microwave 2 teaspoons oil or butter at 100% power for 30 seconds. Drop in 1 small finely chopped onion and cook at the same level for 2 minutes. Tip in 100 grams finely chopped mushrooms and microwave, uncovered for another 2 minutes. Add ½ cup grated cheese, stir and microwave at 100% power for 1 minute more. Store or spread on toast and grill as above.
