Grilled Turkey and Sweet Peppers in Foil
It doesn’t have to be Thanksgiving to have turkey, We certainly can’t grill it like in this recipe where I live for Thanksgiving as it would freeze again!
4 (2 ounces) uncooked turkey breast slices
1/4 cup sliced onion
1/2 small red bell pepper, cut it into strips that are thin
1/2 small yellow bell pepper cut into think strips
4 teaspoons butter cut into four slices
2 teaspoons fresh basil chopped
I was bit by a turkey once! Nobody told me you can’t pet a turkey =)
Heat grill. If you want to you can sprinkle the turkey breasts with salt and pepper. Cut two 18 inch x 12 inch pieces of heavy duty foil. Place two turkey slices on each; top with onion, bell peppers, butter and basil. Wrap each packet securely using double fold seals, allowing room for heat expansion.
Couldn’t make up my mind which to use =)
When ready to grill, place both packets, with the seam side facing up, on gas grill over medium heat. Cook 20-25 minutes until turkey is fork tender and juices run clear. Make sure it is thoroughly cooked as you do not want mr food poisoning to visit, do we? rearrange packets several times during cooking. Open packets carefully to allow steam to escape.
