Italian Chicken

A mouth-watering chicken recipe that everyone in the whole family will fall in love with :) You are sure to have a full and happy belly after eating this dish.

Ingredients
4-6 med. boneless, skinless chicken breasts
1 pkg mild italian sausage links (slice into pieces)
1 large Vidalia onion (chopped)
1 pkg fresh mushrooms (sliced)
1 red pepper (sliced..or you can use green depending on your taste)
1 small clove fresh garlic (minced)
1-2 tsp italian seasoning
1-2 tsp oregano
4-6 slices mozzarella cheese (may sub with low-fat)
1/2 pkg shredded mozzarella cheese
1/2 pkg shredded medium cheddar cheese
1/4 can Italian seasoned bread crumbs
1 small can sliced black olives (opptional)
2 jars of your favorite spaghetti sauce (I use Ragu..I don’t have a homemade sauce recipe, but Ragu super chunky is our favorite :) )

Directions
In a small skillet, saute garlic, red pepper, onion and mushrooms to remove water and set aside. In a medium skillet brown italian sausage, set aside. In a large stock pot, pour in spaghetti sauce and add vegetables, sausage and seasonings and cook on very low heat. Take italian seasoned bread crumbs and pour onto a plate or in a bowl and coat chicken breasts well. Use a large skillet, coat bottom evenly with corn oil and heat to medium. Brown chicken breasts coated with bread crumbs in large skillet until golden brown but not done. Take ckicken out of skillet and put into a 9×13 baking dish and coat each breast with a slice of mozzarella cheese (I like to use two slices on each…we are cheese freaks here at my house:)!!!) Then take your spaghetti sauce mixture and pour over chicken breasts and put in a 350 degree oven for 40 minutes. At 20 minutes, pull dish out and sprinkle shredded cheeses on top of dish and return to oven to continue cooking. Do I have your mouth watering yet???? Enjoy :) To make it a nice meal, I prepare a nice green salad and make some home-made garlic bread to finish off. Then for dessert, we usually all have a small bowl of mint chocolate chunk ice cream to relieve the “full” feeling we get from this rich dinner.
