Lettuce Wraps

A simple, tasty, and good for you snack or meal.

Up until a year ago I had never had a lettuce wrap.  I was at a restaurant with a friend and they ordered them from the menu.  I must say I was intrigued.  Mainly because they looked low fat and I was dieting.

But I got home and said to myself, these are simple, I should be able to make these.  I experimented a little bit and came up with what I think really makes for a great low-fat snack or meal.

Ingredients

  • 1 lb of chicken
  • 1 small onion finely diced
  • 1 large tomato finely diced
  • 6 cloves of garlic finely diced
  • 1 oz sprig of cilantro finely chopped
  • 3 oz dry roasted walnuts chopped
  • 4 oz of either Gyozu, General Tso’s, or Picante sauce
  • add 3 dashes of Tobasco sauce, optional
  • one head of lettuce with intact leaves

Now you can add other things based on your tastes like garbanzo beans, diced zucchini, corn, etc.  Whatever you like.

Method

Steam or bake chicken until done, or start with pre-coooked strips.

Dice or shred the chicken until it is in small chunks.

Dice the vegetables except for the lettuce.

Place all in a bowl.

Add sauce and mix.

Spoon tablespoons of mix onto individual lettuce leaves.  Roll up and enjoy.
