Omelet

Great for breakfast!

What you need:

4 eggs

1/4 cup milk

2 tablespoons margarine

Filling:

1/2 cup deli ham,diced

1/3 cup green or red pepper,diced

1/4 cup mushrooms,diced

1/4 cup onion,diced

1/3 cup cheese,any kind

1 tablespoon margarine

Dash of pepper

How to make it:

1) Beat the egg and the milk together. Set aside.

2) To prepare filling,saute all of the vegetables in 1 tablespoon

margarine on medium-high heat.

3) Pour the egg mixture into a well-greased omelet pan,being sure

to grease both side if you are using the “fold-over” style pan.

4) Cook on medium heat.

5)When bubbles begin to rise to the top, pour all of the sauteed vegetables

onto one side of the pan. Next, layer all of the cheese over the vegetables.

6) When this is done, flip one side of the pan shut,if you have a “fold-over”

style pan. If you have an open-faced style pan,gently fold one side of the omelet

over the layered side, using a spatula. Cook for about 5 more minutes.

7) When the egg is golden brown, remove from the heat.

8) Flip onto a serving dish by placing a plate over the pan. (The plate should be upside down.)

9) Carefully,flip the plate and the pan over so that the plate is right side up.

10) Lift the pan, and you should have a perfect omelet sitting on the plate.

Serve while still warm and enjoy!!!!!

Makes enough for 2 to 4 people…..
