ONE Sweet Sandwich Your Kids Will Love
Here is a summer sandwich your kids will love and it is loaded with goodness that they won’t even know is there unless you tell them. It is one sweet sandwich.
APPLE-BANANA SALAD SANDWICH
2 slices whole grain bread (I use oat bread to make this)
Spread each slice with peanut butter
Place a couple leaves of bib lettuce and a few baby spinach leaves on one slice
Top the leafy greens with thin slices of apple
In a small bowl mash
1/2 ripe banana
Mix with
2 Tbsp. seedless raisins (I sometimes use Craisins infused with blueberry)
Enough mayonnaise or yogurt (plain or flavored, vanilla works good) to make spreadable consistency
Spread banana mixture over sliced apples
Top with a slice of American cheese (optional, I like the cheese added) and with your top slice of bread
Cut in half or in quarters and serve. This goes great with a gelatin salad and a glass of cold milk. (or beverage of choice.)
You get a little bit of crunch, a whole lot of flavor, some cool texture, lots of vitamins, minerals and protein and it is just sweet enough so the kids may just ask for seconds. It is a really good, healthy lunch.

Wonderful quick and healthy. I love whole grain bread. Makes any sandwich healthier. Haven’t tried spinach leaves, but that’s a thought.
