Open Face-oven Done Chicken and Tomato Sandwiches
These sandwiches are super easy to make and are served hot, which is lovely as a winter comfort food, served with a nice hot bowl of tomato or vegetable soup.

Open Face-Oven Done Chicken and Tomato Sandwiches
This sandwich recipe is so easy and nutritious and I use those broasted chickens you get from your local grocer’s deli for the chicken used in this sandwich because the blend of spices they use in doing these chickens is complete and you may only want to add a tad of salt and pepper to the tomato slices!
1 deli roasted chicken from your local grocer
French bread
mayo
tomatoes, cut in thin slices
Mozzarella sandwich slices-or Pepper Jack cheese sandwich slices
grated Parmesean cheese for topping
Cut French bread into four 1″ thick slices. Place on cookie sheet-ungreased. Thinly coat each slice of bread with mayonnaise. A bit of mustard can be added for those who like it.
Add cheese slices-usually 2 slices per each slice of bread. Cut chicken in thin slices and layer on top of cheese, followed by thinly sliced tomatoes. Add a bit of salt and pepper to tomatoes and sprinkle an ample amount of grated Parmesan cheese to the top.
Bake at 350 degrees until cheese on bottom is melted and bubbly.
Serve hot with fruit and a hot bowl of soup!

Wow! Thanks for a mouth-watering recipe. I am always buying the roasted chickens because it is easy and cheap. wow the picture looks yummy….I made a foolish decision a while ago to keep pet chickens, we get great fresh eggs from them, but as a result I have guilt issues with eating chicken.
I can order it in restaurants, or if it somebody else cooked it, I just cannot bring myself to buy it in store -kinda hypocrtical of me I suppose…eating beef just because we dont have pet cows!

I used to have chickens and can never eat what I raise. I could eat their eggs but not them! I can buy a store bought chicken though, maybe you could start back slowly by getting those already cooked ones at the deli, or has owning chickens turned your taste off for chicken entirely?
