Pastrami, Cheese, and Egg Sandwich

It’s time to use other types of bread when preparing sandwiches. The oatmeal loaf used in this recipe adds crunch and additional flavor.

Ingredients:

3/4 cup mayonnaise

1 tablespoon mustard

1 1/2 teaspoons chili powder

1 tablespoon chopped parsley

4 pieces hard-boiled egg, cubed

salt and pepper to taste

8 slices bread

1/4 cup butter

lettuce

8 slices pastrami

8 slices cheese

Directions:

1.  In a bowl, combine mayonnaise with mustard, chili powder, and parsley. Add in the cooked egg and blend well. Season to taste.

2.  Spread the bread slices with some softened butter. Top 4 slices with lettuce and other vegetables of choice. On each bread put 2 slices pastrami and 2 slices cheese.

3.  Top with the egg mixture then cover with the remaining 4 slices of bread.
