Peach Recipes

Here is a recipe I got from Taste of Home healthy cooking magazine, delicious! We loved most of the recipes in this magazine we are in the process of tasting the others!

This first one is from Deidre Dee Cox of Milwaukee, wisconsin

Takes 10 minutes to put ingredients together and time to freeze

6 servings

Bellini Ice

Place two quartered  peeled medium peaches in a fruit processor. Cover and process until pureed. Transfer to an 11 inch x 7 inch dish. Stir in 2 cups of white grape juice, 1 cup lemon=line carbonated water and 1/4 cup lime juice. Freeze for 1 hour; stir with fork. Freeze 2 to 3 hours longer  or until completely frozen stirring every 30 minutes. Stir with a fork just before serving, spoon into dessert dishes. Garnish with peach slices if you so wish.

Only 65 calories without garnish, trace of saturated fat, 0 cholesterol, 5 mg of sodium, 16 grams carbohydrates, 1 g fiber, 1 g protein

PEACH TURKEY SANDWICHES

This recipe is from Donie Langston  Wathena, Kansas

Spread 2 slices whole wheat bread with 1 Tablespoon mayonnaise and red vidella onion slices each(we changed it around a bit) Top 2 with 2 slices deli turkey, 1 slice smoked gouda cheese and 1/2 thinly sliced medium peach. Top with another slice of bread. Spritz outsides of sandwich with cooking spray. In a large non stick skillet over medium heat, toast sandwiches 2 to 3 minutes on each side or until cheese is melted.

357 calories each, 15 grams fat (4 grams saturated fat)36 mg of cholosterol, 948 mg sodium, 34 mg carbohydrates, 5 grams fiber, 22 grams protein.
