Pesto Mushrooms on Toast

A recipe for a quick, easy and tasty snack.

If you’re feeling a little peckish, this is a great treat that’s quick and easy to make. All you will need is:

Ingredients

  • A hand full of mushrooms
  • A small garlic clove (optional)
  • A little oil for frying
  • A little Pesto
  • A slice of wholemeal bread
  • A little parmesan (optional)
  • Chop the mushrooms very finely, and crush the garlic.

Method

Fry both in the oil for a few minutes. Be careful not to burn the garlic.

Add a little pesto and take off the heat. The amount of pesto you add is up to personal taste; I like it quite strong so I used 2½ teaspoons, use less if you want.

Toast the bread. If you toast it under a grill, once the bread is toasted slightly you can add the mushrooms and sprinkle a little parmesan on top and put it under the grill again for a minute. Serve with a salad.
