Pinwheel Sandwiches

Instead of the usual sandwiches, try these pinwheels for a change.

Ingredients:

  • 4 slices fresh bread 
  • 1 oz butter 
  • ½ cup boneless fish, boiled and minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste ½ cup paneer, crumbled.

Method:

  1. Cut off the crusts of the bread.
  2. Mix all the ingredients and spread on the buttered slices.
  3. Roll up each slice of bread and wrap tightly in greaseproof paper or foil.
  4. Chill.
  5. Remove paper and cut into ½ inch slices.
  6. Serve garnished with parsley or coriander leaves.
