Pinwheel Sandwiches

Instead of the usual sandwiches, try these pinwheels for a change.
Ingredients:
- 4 slices fresh bread
- 1 oz butter
- ½ cup boneless fish, boiled and minced
- 1 teaspoon lemon juice
- Salt and pepper to taste ½ cup paneer, crumbled.
Method:
- Cut off the crusts of the bread.
- Mix all the ingredients and spread on the buttered slices.
- Roll up each slice of bread and wrap tightly in greaseproof paper or foil.
- Chill.
- Remove paper and cut into ½ inch slices.
- Serve garnished with parsley or coriander leaves.
