Post-holiday Turkey Sandwiches

I wouldn’t have thought that this combination would work, but now I am hooked. Maybe I should make turkey dinners more often.

I have always wondered what to do with the leftover cranberry sauce after a Christmas or Thanksgiving dinner. These are the only times of the year when I buy cranberry sauce. I should just buy the little cans, but it is a much better deal to buy the big ones.

So, here is my post-holiday turkey sandwich recipe:

Dinner rolls (I love those soft little buns, even though they make tiny sandwiches)
Cold turkey
Cranberry sauce (about 2 tablespoons)
Spinach dip (recipe below)

As with anything I cook, my philosophy is to use what you’ve got. You could make this fancy for a meal by making the sandwiches open face and using reheated turkey.

Spinach Dip

1 cup sour cream
1 cup mayonnaise
1 pkg dried vegetable soup mix
1 cup chopped spinach, thawed with the water squeezed out
1 small can water chestnuts, shredded
     (water chestnuts are optional, but they add crunch to the dip. I buy the whole ones and shred them in my handy dandy salad shooter gizmo)

Mix all ingredients. Refrigerate until serving. Best if made the night before.

    Gotta say Karen, I do the MAN sized version of this, using the sub rolls for the bread. I also add left over stuffing. Thanksgiving on a bun.

    Sounds rather nice. I’ve stopped having turkey at Christmas because of the left overs, there’s only so much turkey two people can eat!

    We have a tradition of getting my dad to carve the turkey and then after dinner he cuts it all into bite size pieces and I freeze it in small containers to use in stir frys or casseroles.
