Spinach Meatloaf

Here’s a recipe for a meatloaf.

1 slice whole wheat bread (or any other bread you like)

1/2 cup of skim milk (or any other milk, just don’t use whole or butter milk)

1 Tablespoon olive oil

1 small onion diced (optional)

5 oz. bag of baby spinach leaves ( i use frozen sometimes but it has to defrost first)

1 1/4 lb. ground turkey

2 tablespoons finely grated parmesan cheese

1 large egg

1/2 teaspoon salt

1/4 teaspoon ground pepper

For the glaze:

3 Tablespoons of ketchup

2 teaspoons of Worcestershire sauce

Preheat oven to 375 degrees

1.  Grind bread into fine crumbs and pour milk over them.  Set aside.

2.  Large skillet, add 1 teaspoon of olive oil, over medium heat.  Add onion and cook until softened and golden, about 5 minutes.

3.  Add spinach and stir for about 30 seconds.

4.  In bowl, add crumbs with milk, turkey, cheese, egg, salt, and pepper.  Combine with hands.

5.  Add in onions and spinach and mix in.

6.  Take one loaf pan and place all mixed ingredients into it.  Place on middle rack and bake for 40 minutes.

7.  In small bowl, combine ketchup and W. sauce.  When meatloaf is done either spread sauce over the entire top of loaf, or allow each person to place how much they want on.
