Spinach, Salsa and Cream Cheese Yumminess
I’ve been attempting to eat healthier in my day-to-day life and wanted to share a recipe that I made full use of over the weekend. It was healthy, it filled me up and above all, it was freaking yummy.
I’ve been attempting to eat healthier in my day-to-day life and wanted to share a recipe that I made full use of over the weekend. It was healthy, it filled me up and above all, it was freaking yummy.
Ingredients
- Whole Wheat Tortillas
- Whole Leaf Spinach (or Baby Spinach leaves)
- Newman’s Own All Natural Bandito Salsa (I chose Medium)
- Fat-Free Philadelphia Cream Cheese
Method
- Spread a thin layer of the cream cheese over your whole wheat tortilla. Spoon out the desired amount of salsa and then place your whole spinach leaves in the middle of the tortilla. The idea is to for the ingredients to be placed as evenly as possible, making it easy to roll up. After rolling up your tortilla, take a knife with a very sharp blade (to cut through the spinach smoothly – a butter knife will not work) and slice off smaller “pinwheel” sections of your wrap.
- You can make it look pretty on a plate and serve as hors d’oeuvres or just gobble the whole thing up as a lunch entr
