Stir Fry and Tofu Cheese in Whole Wheat Tortillas

This is a simple healthy lunch or dinner for anyone.

Ingredients

5 slices of tofu cheese

1 cup of carrots

1 cup of bell pepper

½ cup of mushrooms

1 cup of broccoli

1 tbsp of soy sauce

1 medium onion

3 cloves of garlic

5 whole wheat tortillas wrap

1 tsp of thyme

1tsp basil

Salt and pepper to taste

1 package of firm tofu

5 tbsp of olive oil

½ cup of water

1 tsp of ground or fresh ginger

Directions

Add olive oil, soy sauce, chopped onion and garlic to a hot pan

Sauté for two minutes

Cut tofu into cubes and add to pan

Cook tofu until slightly brown

Add   chopped mushrooms, broccoli, carrots, and bell peppers to pan

Add ½  cup of water and allow to cook for  10 minutes or until vegetables are tender

Add basil , thyme,  salt ,pepper and ginger to  pan and toss

Add 5 slices of tofu cheese and allow melting for 2-3 minutes

Place a small amount of stir fry into a tortilla and roll into a wrap
