Suberb Chicken Salad Sandwich

An easy to fix, tasty sandwich recipe for a very nutritious meal.

 Superb Chicken  Salad Sandwiches

         

  2-cans light meat chicken chunks in water

  1-small can black olives-in slices

  2-large tablespoons sweet pickle relish

  1/2 small jar-roasted red pepper, chopped-usually one large pepper comes in each jar

  1-tablespoon spicy mustard

  mayonnaise

  salt, pepper, garlic powder and onion powder to taste.  I add these instead of fresh onion and garlic that some family members do not like added when fresh, but if you like, the addition of a clove of fresh garlic and one-quarter chopped onion would be delicious!

  Mix together with enough mayonnaise to make mixture nice and moist-2-3 large tablespoons or so.  Make sure to mash chicken up a bit as it comes in chunks from the can.

  Toast and lightly butter each sandwich before spreading a nice amount of chicken salad onto sandwich.  (Don’t ask me about calories, sometimes you just ignore them unless you have health issues.)  Also, any kind of bread may be used, French is extraordinarily good!

  Serve with fruit, chips and a dill pickle spear.

    Sounds so yummy and I think I will make it for lunch tommorrow. I have never had it with relish or peppers – I will let you know and thanks for sharing.

    Hi Dear Jane,
    Thanks once again for stopping by. I feel like wonderful friends are actually visiting with me and it’s so nice!
    I made this recipe today and after using only 1/2 jar of the roasted red peppers, I found that it could have taken the whole jar since the contents of one jar is like one-half of a large red bell pepper, so next time I will dice the entire jar up.
    A cost-efficient hint: the roasted pepper, olives and chicken cost only one dollar each at the Dollar General Store, also the pickle relish. The mayo was a little more but under two dollars! Look at how much money can be saved and you get about 4 sandwiches out of this recipe.
